When I began working with the Vignerons du Sieur d’Arques in the 80’s, my first assignment was to optimize the diversity and complexity of the Limoux terroir, using Selection au Terroir, then to introduce the planting of international grape varieties. This process was accompanied by vast investments in wine making equipment, making it possible to produce wine under the best conditions.
